And Ive heard of old timers catching ground hogs (and other animals) and feeding them corn for a couple weeks to clean them out and make them taste better before killing them.

I laugh at people that rave about organic grass fed beef. They get all excited and talk about how great it is, when they find some place that serves it. I tell them they fell for the marketing, that grass fed beef tastes like crap. That's one of the reasons people pin a cow up and feed it corn before slaughtering it.

If you are near a Harris Teeter then you can almost always buy Ground Buffalo and, occasionally, ostrich. My son likes both but they just taste like grass fed cattle that were not slaughtered until they were too old. To each his own though. Many people, many tastes. Parsnips and saffron are among two of my most despised vegetables and seasonings yet, to many, a taste treasure.

A sorry, but buffalo burgers aren't good. They came about as a healthier alternative. Bison is leaner, less fat. But the problem is, the flavor in meat comes from the fat. The fat also keeps the meat from drying out when cooking. Especially burgers.
People say that buffalo burgers are great because the novelty makes them think it's supposed to be better than beef. But the reality is that most places can't cook it properly (especially burgers) and screw it up.

I saw some bison in a pasture in Ashe this weekend. They were still on the hoof though :)

Lowe's Foods has some burgers in the meat dept, not bison but different. Also the bacon is actually cheaper per pound as well.
I love meat markets, and a good butcher
I also like yoga....weird huh?

Bison Burgers are Very Very Good. They are a lot more lean than Beef Burgers.

Some Fuddruckers locations have Elk, Buffalo and Wild Boar burgers. While I like the Elk better, the Buffalo is still very good. Never tried the Boar burger.

I've had bear meat. It wasn't very good. Maybe it was the way it was cooked. It was kind of like a tough pork chop.

in Wyoming and Montana and Colorado as is Norther California there are restaurants that serve Beefalo....Cross between Buffalo and Beef....have had that as well and it was very tasty.....some burger places on the East Coast may list it on their menu if they do give it a try.....

Freddie Mae used to cook rattle snake for me. She fixed it like salmon patties with a little onion it was good.

When I was in Nebraska a few years ago the locals had a wildgame supper as a fundraiser. The buffalo steaks and the elk were some of the best steaks I have ever had. And yes I had one of both. The bear on the other hand went in the trash can.
