Parmesan Chicken with Lemon sauce
Parmesan Chicken with Lemon sauce

Yep another chicken dinner. Really fast and super healthy.


3 8 cup boneless skinless chicken breast cut in half
1/2 teaspoon salt and pepper
3 Tablespoons flour
1 Tablespoon olive oil
1/4 cup juice of fresh lemon
1/2 cup of fat free chicken broth
3 Tablespoons capers optional...I can't eat them
2 Tablespoons butter
3 Tablespoons grated parmesan cheese

2 cups fat free chicken broth
1 roll of pre made Polenta with Basil and garlic
good sized bunch of swiss chard
1/2 teaspoon pepper and salt
2 Tablespoons olive oil
11/2 Tablespoons fresh lemon juice
minced garlic to taste


Toss chicken in with mixture of salt, pepper, and flour evenly coat.
Heat oil in non stick skillet medium heat.
Cook till done and keep warm.
Should have a nice golden brown color.
In the same pan add lemon juice, and broth to loosen any brown buts.
Reduce to half add butter and capers if you dare!
Spoon this onto chicken and sprinkle with Parmesan when ready to serve.

In the meantime ...Cut polenta into pieces.
place in medium sized sauce pan heat and add almond milk or milk to get a creamy consistency like grits.
keep warm till ready to serve.

Last but not least.
Take a good sized bunch of swiss chard and Sautee.
Combine oil, lemon juice, garlic, salt and pepper.
Pour over swiss chard toss heating throughly and serve.
Enjoy!!!
