Easy to make. You can use any fruit you want if you don't like bananas. I've used cooked apples, strawberries, blueberries, and raisins.

2 cups of self rising flour
1/4 cup of sugar
1 cup of milk
1 large egg
1/3 cup of vegetable oil
3/4 cup of mashed bananas, or any other fruit you like
1/2 cup of chopped walnuts
cupcake cups are optional

Sift flour and sugar into a medium sized mixing bowl. Use a spoon to make a well in the middle.

In a separate bowl, mix milk, egg, oil, bananas, and walnuts, and stir until egg is well beaten. Pour this into the well in the other bowl.

Mix batter slowly until just moistened. I usually try to fold everything together about 30 times. You don't want it to be mixed up like a cake, just make sure it's all moist.

Spoon batter into a cupcake pan. I usually use cupcake cups to make it easier to clean up, but if you don't use them then the outside will become crunchier. If you don't use them, be sure to only grease the bottom and halfway up each cup.

Bake at 400 for about 15 minutes, or until the top is nice and brown.

I haven't tried this, but I think it would be good if you add small chunks of cream cheese to the batter.
